  • 1/2 cup brown sugar packed
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 cup canned pumpkin pureed
  • 2 tsp orange zest freshly grated

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan and set aside.
  2. In a large mixing bowl, sift together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, salt, and sugars. Whisk briefly to combine everything evenly.
  3. In a separate bowl, whisk the eggs, then add the oil, pumpkin puree, and orange zest. Mix until smooth and well combined.
  4. Pour the wet mixture into the dry ingredients. Gently fold with a rubber spatula until just combined, avoiding overmixing to keep the bread tender.
  5. Pour the batter into the prepared loaf pan, spreading it evenly with the spatula.
  6. Bake in the preheated oven for about 50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
